I don’t know about you but as much as I LOVE cooking I really despise the washing up afterwards…
Which is why one tray dinners are my favourite! And this one is no exception, delicious roasted veggies with salmon fillets and a healthy teriyaki sauce. YUM!
Adaptations:
If you’re gluten free, make sure that you use a gluten free tamari
You can also swap the veggies for whichever you have on hand or enjoy
Teriyaki Salmon Tray Bake
Ingredients
- 2 fillets salmon
- 1 bunch broccolini
- 200 g cherry tomatoes
- 2 cups cauliflower
- 40 ml tamari or soy sauce
- 1 tbsp water
- 1/2 tbsp honey
- 1/2 tbsp ginger minced
- 1/2 tbsp garlic minced
Instructions
- Preheat oven to 200 c. In a bowl, mix together the tamari, water, honey, ginger and garlic. Add the salmon to the marinade and allow to marinate for a minimum of 30 minutes.
- Chop the cauliflower into florets and place on a lined baking tray with the broccolini, tomatoes and salmon. Drizzle the marinade over the salmon.
- Bake for 25-30 minutes and divide into 2 serves
