Whenever I make these black bean brownies, my favourite thing to do is not tell the recipient of my weekend baking adventures that they’re made from beans, and then see if they can tell that they’re ‘healthy’ brownies. So far, no one has guessed and EVERYONE adores them. They’re simple, delicious and are sure to be one of your new favourites
Adaptions
If you’re gluten free you can use gluten free flour. The honey can be swapped for any other liquid sweetener like rice malt syrup or maple syrup
Meal Prep
The brownies freeze really well, so you can make them in bulk for a quick and easy snack another day
Healthy Chocolate Brownies (with hidden black beans)
Ingredients
- 400 g tin black beans drained and rinsed
- 3/4 cup flour of gluten free flour
- 1/4 cup cacao powder
- 1/4 cup olive oil
- 1/2 cup honey or rice malt syrup
- 2 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/3 cup walnuts
- 1 tbsp chocolate chips optional
Instructions
- Preheat an oven to 180c
- Blend all ingredients, except walnuts, in a food processor.
- Chop walnuts and stir through the mixture
- Pour into a lined square brownie tin (optional top with chocolate chips) and bake for 15-20 minutes.
