A twist on the traditional apple crumble, with added berries and a healthier top.
The berries made for the best addition, not only did they create an amazing colour, but the flavour was insane! A perfect balance of sweet and sour. And don’t forget the crunchy crumble top, I swear you wouldn’t even know it’s healthy!
Healthy Apple and Berry Crumble
Ingredients
Filling
- 4 pink lady apples large
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1 cup water
- 1 1/2 cups mixed berries
Crumble
- 1 1/2 cups oats or quinoa flakes for gluten free
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 3 tbsp rice malt syrup
- 3 tbsp olive oil
- 50 g walnuts
Instructions
- Preheat an oven to 160c. Chop the apples into 2cm chunks, removing the core but keeping the skin on. (= ~480g chopped apple)
- In a saucepan on medium heat, add the apples, sugar, cinnamon, vanilla and water. Cook for 20 minutes or until the apples are soft.
- Stir the mixed berries into the apple mix and cook for a further 10 minutes.
- In a food processor or blender, blitz all crumble ingredients until a chunky crumb is formed.
- In a baking dish/small casserole pan, pour the apple mixture in and top with the crumble. (*Instead of spreading the crumble on, I break little bits up and sprinkle it over to create a nice texture)
- Bake in the oven for 30-35 minutes.
